A Silky Italian Dessert with a Japanese Soul
Panna Cotta translates to ‘cooked cream’. By infusing this rich, gelatin-set Italian dessert with vibrant, earthy culinary matcha, you create a striking, jiggly, and elegant dessert that takes only 15 minutes of active prep time.Ingredients
- 1.5 cups heavy cream
- 1/2 cup whole milk
- 1/3 cup granulated sugar
- 1.5 tbsp culinary-grade matcha powder
- 1 packet (2.5 tsp) unflavored gelatin powder
- 2 tbsp cold water
Instructions
- In a small bowl, sprinkle the gelatin powder over the cold water. Let it bloom for 5 minutes.
- In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat, stirring until the sugar dissolves and it begins to simmer (do not boil).
- Remove from heat. Whisk the matcha powder with 2 tablespoons of hot water until smooth, then whisk this slurry into the hot cream mixture until uniformly green.
- Stir the bloomed gelatin into the hot liquid until it is completely dissolved.
- Strain the mixture through a fine-mesh sieve into individual ramekins or glass cups to ensure a silky texture.
- Refrigerate for at least 4 hours until completely firm and set.
