A Silky Italian Dessert with a Japanese Soul

Panna Cotta translates to 'cooked cream'. By infusing this rich, gelatin-set Italian dessert with vibrant, earthy culinary matcha, you create a striking, jiggly, and elegant dessert that takes only 15 minutes of active prep time.

Ingredients

  • 1.5 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1.5 tbsp culinary-grade matcha powder
  • 1 packet (2.5 tsp) unflavored gelatin powder
  • 2 tbsp cold water

Instructions

  1. In a small bowl, sprinkle the gelatin powder over the cold water. Let it bloom for 5 minutes.
  2. In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat, stirring until the sugar dissolves and it begins to simmer (do not boil).
  3. Remove from heat. Whisk the matcha powder with 2 tablespoons of hot water until smooth, then whisk this slurry into the hot cream mixture until uniformly green.
  4. Stir the bloomed gelatin into the hot liquid until it is completely dissolved.
  5. Strain the mixture through a fine-mesh sieve into individual ramekins or glass cups to ensure a silky texture.
  6. Refrigerate for at least 4 hours until completely firm and set.
