Ginger Pork (Shogayaki)
The ultimate Japanese home-cooked comfort meal. Thinly sliced pork loin fried quickly and coated in a sharp, aromatic ginger-soy glaze.
Ingredients
- 250 g Thinly sliced pork loin or bellyn1/2 medium Onion
- slicedn1 tbsp Grated fresh gingern2 tbsp Soy saucen2 tbsp Mirinn1 tbsp Saken1 tsp Sugarn1 tbsp Cooking oiln1 tbsp All-purpose flour
Instructions
- Step 1: Mix the grated ginger, soy sauce, mirin, sake, and sugar together in a small bowl to make the sauce.nStep 2: Lightly dust the pork slices with flour.
- This helps seal in the juices and thickens the sauce later.nStep 3: Heat cooking oil in a skillet over medium-high heat.
- Add the onion slices and saute for 2 minutes until slightly softened.nStep 4: Push the onions to the side, add the pork slices in a single layer, and sear for 1-2 minutes until golden on both sides.nStep 5: Pour the ginger-soy sauce mixture into the pan.
- Toss everything quickly over high heat for 1 minute until the sauce reduces and glazes the meat beautifully.
- Serve hot.
