Ingredients
- 0.5 pack (4 cubes) House JAVA Curry Roux
- 300 g (or 10 oz) Chicken thigh, cut into bite-sized pieces
- 1 medium Onion, thinly sliced
- 1 medium Potato, cut into small bite-sized pieces
- 0.5 medium Carrot, cut into small bite-sized pieces
- 1 tbsp Cooking oil
- 500 ml Water
- Warm cooked Japanese rice for serving
Instructions
- Saute the Veggies and Chicken: Heat cooking oil in a medium pot over medium-high heat. Add the thinly sliced onions and saute for 3 minutes until translucent. Add the chicken pieces, carrots, and potatoes, cooking for another 2-3 minutes until the chicken changes color.
- Simmer to Tender: Pour in exactly 500ml of water and bring it to a boil. Skim off any foam that rises to the surface. Reduce the heat to medium-low, cover with a lid, and let it simmer for about 8-10 minutes until the vegetables are fork-tender.
- Melt the Curry Magic: Turn off the heat completely. (This is the golden rule of Japanese curry—never add the roux while boiling!). Break the JAVA Curry blocks into the pot. Stir gently until the roux is completely dissolved.
- Thicken and Perfect: Turn the heat back on to low. Simmer uncovered for another 3-5 minutes, stirring occasionally, until the curry thickens beautifully and turns glossy.
