Nikujaga (Meat and Potatoes) is the ultimate Japanese comfort food, evoking nostalgia for home-cooked family dinners. Thinly sliced beef, potatoes, carrots, and onions are simmered in a sweet dashi broth until completely melting and flavorful.
Ingredients (2-3 Servings)
- 1/2 lb thinly sliced Beef
- 3 medium Potatoes (peeled and cut into large chunks)
- 1 Carrot (cut into rolling chunks)
- 1 Onion (sliced into wedges)
- 1 cup Dashi stock
- 2 tbsp Soy sauce & 2 tbsp Mirin
- 1 tbsp Sake & 1 tbsp Sugar
- 1 tsp Vegetable oil
Instructions
- Sauté ingredients: Heat vegetable oil in a pot over medium heat. Sauté onions and beef for 2 minutes until beef changes color. Add potatoes and carrots, stirring for another minute.
- Simmer with aromatics: Pour in the dashi stock, sake, and sugar. Bring to a boil and skim off any foam. Reduce heat to low, cover with a lid, and simmer for 7 minutes.
- Season deeply: Add soy sauce and mirin. Cover again and simmer gently for 15 minutes, until potatoes are tender and the liquid reduces by half.
- Rest for maximum flavor: Turn off heat and let it sit covered for 10 minutes before serving. This allows the potatoes to soak up the umami broth deeply.
