Ochazuke is a simple, comforting Japanese dish made by pouring hot green tea or savory dashi broth over a warm bowl of rice topped with savory elements like salted grilled salmon.

Ingredients (1 Serving)

  • 1 bowl of hot Steamed Japanese Rice
  • 1 small piece Salted Grilled Salmon fillet (flaked)
  • 1 cup Hot Green Tea (preferably Genmaicha or Sencha) or clear Dashi broth
  • Toppings: Arare (rice crackers), shredded Nori, green onions, and a touch of Wasabi

Instructions

  1. Prepare base: Scoop fresh, piping-hot steamed short-grain rice into a deep serving bowl.
  2. Add main topping: Flake your freshly grilled salted salmon and place a generous mound right in the center of the rice bed.
  3. Garnish artfully: Scatter finely sliced green onions, crispy arare rice crackers, and shredded nori around the salmon. Place a small dab of wasabi on top of the fish.
  4. Pour & Serve: Slowly pour the freshly brewed hot green tea or seasoned dashi broth around the edges of the rice bowl until the liquid reaches about halfway up the rice mound. Mix gently with chopsticks and enjoy immediately!
