Udon Noodle Salad with Sesame Dressing
A vibrant, refreshing, and incredibly satisfying cold noodle salad. Chewy udon noodles are chilled to perfection and tossed with crisp summer vegetables, sweet cherry tomatoes, and a deeply rich, nutty, and creamy roasted sesame dressing.
- 2 portions Udon noodles
- 1/2 Cucumber
- 1 cup Shredded lettuce or green cabbage
- 5 Cherry tomatoes
- 1/4 cup Creamy roasted sesame dressing
- 1 tbsp Toasted sesame seeds
- 1 Green onion
Cook and Chill the Noodles: Boil the udon noodles according to the package directions. Immediately drain the hot noodles and plunge them into a bowl of ice water. Wash the noodles vigorously with your hands to remove surface starch and chill them completely. Drain very well.
Prepare the Vegetables: Julienne the cucumber into thin matchsticks. Shred the lettuce or cabbage finely. Halve the cherry tomatoes. Finely slice the green onion.
Assemble the Base: Divide the cold, chewy udon noodles into two wide serving bowls.
Add the Greens: Arrange the shredded lettuce, julienned cucumber, and cherry tomatoes beautifully around and on top of the cold noodles.
Dress and Serve: Drizzle the creamy roasted sesame dressing generously over the noodles and vegetables. Garnish with a sprinkle of toasted sesame seeds and fresh green onions. Toss everything together right before eating.
