Ponzu Glazed Chicken
Tender, juicy pan-seared chicken thighs coated in a glossy, vibrant glaze made from traditional Japanese Ponzu (citrus soy sauce) and sweet mirin. A perfect balance of bright citrus acidity and savory umami.
Ingredients
- 1 lb Boneless skin-on chicken thighs
- 1 tbsp Vegetable oil
- Salt and white pepper
- 1 tbsp All-purpose flour
- 1/4 cup Ponzu sauce
- 2 tbsp Mirin
- 1 tbsp Sake
- 1 tsp Sugar
- 1 clove Garlic grated
- Toasted sesame seeds
Instructions
- Prepare the Chicken: Pat the chicken thighs completely dry. Prick the skin a few times with a fork so it cooks evenly. Season lightly with salt and pepper. Right before cooking, lightly dust the chicken with flour, shaking off excess (this thickens the glaze).
- Mix the Sauce: In a small bowl, whisk together the ponzu sauce, mirin, sake, sugar, and grated garlic until the sugar dissolves.
- Sear the Chicken: Heat the vegetable oil in a skillet over medium-high heat. Place the chicken skin-side down. Cook undisturbed for 5 to 6 minutes until the skin becomes beautifully golden brown and crispy.
- Cook Through: Flip the chicken, lower the heat to medium, cover with a lid, and cook for 4 more minutes until fully cooked.
- Glaze and Caramelize: Remove the lid and wipe out excess fat with a paper towel. Pour the ponzu mixture into the skillet. Bring to a bubble over medium-high heat. Baste the chicken constantly until the sauce reduces into a dark, sticky, and glossy lacquer. Slice into strips and serve garnished with sesame seeds.
