Chicken Soboro Don
A colorful, charming bento staple featuring three seasoned toppings over a comforting bed of rice: sweet-savory chicken ground meat, fluffy scrambled eggs, and bright green peas.
Ingredients
- 250 g Ground chicken or turkeyn2 tbsp Soy saucen1.5 tbsp Mirinn1 tbsp Saken1 tbsp Sugarn1 tsp Grated gingern3 Eggsn1 tsp Mirin (for egg)nA pinch of Saltn1/3 cup Boiled green peas or edamamen2 bowls Hot cooked rice
Instructions
- Step 1: In a small saucepan before turning on the heat, combine ground chicken, soy sauce, mirin, sake, sugar, and grated ginger.
- Mix well with 4 chopsticks to break up clumps.nStep 2: Place the saucepan over medium-low heat.
- Stir continuously with the chopsticks until the chicken is completely cooked, crumbly, and the liquid has mostly evaporated.nStep 3: In another clean saucepan off heat, whisk the eggs with 1 tsp mirin and a pinch of salt.nStep 4: Cook the eggs over low heat, whisking constantly with 4 chopsticks to create tiny, fluffy, scrambled egg crumbs.nStep 5: Fill bowls with hot rice.
- Divide the surface visually into sections and neatly spoon the savory chicken soboro, golden egg crumbles, and green peas on top in a beautiful pattern.
