Volcano Roll
A spectacular sushi bar favorite. A classic California roll is heavily topped with a rich, spicy blend of chopped seafood and mayonnaise, then baked until the topping is warm, bubbly, and slightly caramelized. It is rich, decadent, and absolutely thrilling.
Ingredients
- 1 Classic California Roll
- 1/2 cup Chopped scallops or crab meat
- 2 tbsp Spicy mayonnaise
- 1 tsp Sriracha
- 1 tbsp Eel sauce
- 1 tsp Tobiko
- 1 Green onion
Instructions
- Preparation: Prepare or purchase a classic California Roll (crab, avocado, cucumber inside, rice outside). Slice it into 8 pieces and arrange the pieces closely together on a foil-lined baking sheet.
- Make the Volcano Topping: In a small bowl, mix the chopped scallops or crab meat with the spicy mayonnaise and Sriracha sauce until fully coated and creamy.
- Top the Sushi: Spoon a generous mound of the spicy seafood mixture directly over the top of each piece of the sliced California roll, creating a ‘volcano’ shape.
- Bake: Place the baking sheet in a toaster oven or under the oven broiler. Bake or broil for 3 to 5 minutes, keeping a close eye on it, until the mayonnaise topping bubbles and turns a beautiful golden-brown color.
- Garnish and Serve: Remove from the oven. Drizzle the warm rolls heavily with sweet, thick eel sauce. Garnish with vibrant orange Tobiko (flying fish roe) and finely sliced green onions. Serve immediately while warm.
