Dorayaki is a classic Japanese sweet snack consisting of sweet red bean paste (Anko) sandwiched between two fluffy, honey-infused pancakes. Learn how to achieve that perfectly smooth, uniform golden-brown skin that characterizes high-end Japanese confectionery shop creations.

Ingredients (Makes 4 sandwiches)

  • 2 large Eggs
  • 1/2 cup Sugar
  • 1 tbsp Honey
  • 1 cup All-purpose flour
  • 1/2 tsp Baking soda dissolved in 1 tbsp water
  • 1-2 tbsp Water (to adjust consistency)
  • 1 cup Sweet Japanese Red Bean Paste (Anko, smooth or chunky)

Instructions

  1. Whisk the batter: In a large bowl, vigorously whisk the eggs, sugar, and honey together until the mixture becomes pale and slightly frothy. Sift in the flour and fold gently. Add the dissolved baking soda water and mix smoothly. Cover the bowl and let rest for 15 minutes.
  2. Adjust thickness: After resting, check the consistency. The batter should flow in a smooth ribbon. Add 1 tablespoon of water if it feels too thick.
  3. Cook perfectly flat: Heat a non-stick skillet over low heat. Lightly wipe the pan with an oiled paper towel, then wipe it off completely with a dry towel (any visible oil droplets will create spots on the pancake).
  4. Pour & Flip: Pour a small ladle of batter from a high point to form a perfect 8cm (3-inch) circle. Cook on low heat for about 75-90 seconds until bubbles appear on the surface. Slip a spatula underneath and flip quickly. Cook the other side for just 30 seconds. Repeat to make 8 pancakes.
  5. Assemble: Let the pancakes cool down slightly. Place a generous scoop of sweet red bean paste in the center of one pancake, then top with another pancake. Press the edges gently together. Wrap in plastic wrap for 10 minutes to make them perfectly moist and soft.
