Teriyaki Salmon Glaze

Ditch the bottled sauce! This authentic Japanese Salmon Teriyaki features crispy pan-seared salmon fillets glazed in a quick, glassy, and glossy reduction of real soy sauce, mirin, sake, and sugar.
Ingredients (2 Servings)
- 2 Salmon fillets (skin-on preferred)
- 1 tsp Flour (for light dusting) & 1 tsp Vegetable oil
- Authentic Teriyaki Glaze: 2 tbsp Soy sauce, 2 tbsp Mirin, 2 tbsp Sake, 1 tbsp Sugar
- Garnish: Green onions or toasted sesame seeds
Instructions
- Prep salmon: Pat salmon fillets completely dry with paper towels. Dust the flesh sides very lightly with flour (helps the teriyaki glaze cling to the fish beautifully later).
- Pan-sear skin down: Heat oil in a skillet over medium heat. Place salmon skin-side down. Press gently for 1 minute to ensure flat crispy skin. Cook for 4-5 minutes until skin is ultra-crisp. Flip and cook for 2 minutes.
- Remove excess oil: Wipe out any excess oil pooled in the pan with a paper towel.
- Glaze and reduce: Pour the mixed teriyaki glaze ingredients directly into the hot skillet. It will instantly bubble. Spoon the reducing sauce continuously over the salmon for 1-2 minutes until the liquid transforms into a thick, shiny glaze.
- Serve: Plate immediately alongside steamed rice, pouring the glossy pan sauce over the top.
