Traditional Taiyaki (Fish Cakes)

Notes

Taiyaki is Japan's most beloved street food dessert! It features a golden, waffle-like fish-shaped waffle wrapper with a beautifully crisp exterior and a warm, sweet, and comforting red bean paste filling inside.

Ingredients (Makes 4 Taiyaki)

  • 1 cup All-purpose flour & 1 tsp Baking powder
  • 1 large Egg & 3/4 cup Milk
  • 2 tbsp Sugar & 1 tbsp melted Butter
  • 1 cup Sweet Japanese Red Bean Paste (Anko) or Vanilla Custard
  • Vegetable oil (for brushing the iron mold)

Instructions

  1. Whisk crisp batter: In a large bowl, whisk egg and sugar. Add milk and mix smoothly. Sift in flour and baking powder, folding gently until combined. Stir in melted butter. Pour batter into a measuring pitcher.
  2. Heat mold: Heat your fish-shaped taiyaki pan over medium-low heat. Brush both sides thoroughly with vegetable oil.
  3. Pour base: Pour batter into the fish molds on one side until about half full. Quickly spoon a generous cylinder of sweet red bean paste neatly into the center of the fish body.
  4. Seal & Flip: Pour more batter over the red bean paste to completely cover it. Close the taiyaki iron mold firmly, lock the handle, and immediately flip the entire pan over.
  5. Bake golden: Cook on low heat for 2-3 minutes on each side, turning the pan frequently, until the waffle turns a beautiful uniform golden-brown and crisp. Remove carefully and enjoy piping hot!
