Doria is a Japanese invention combining French gratin with rice. A bed of buttered rice is topped with a mix of shrimp and squid, smothered in a rich, creamy white béchamel sauce, covered in cheese, and baked until bubbling and golden.

Ingredients

  • 2 cups cooked white rice (warm)
  • 1 tbsp butter
  • 1/2 lb mixed seafood (shrimp, squid, scallops)
  • 1/2 onion (sliced)
  • 1 cup shredded mozzarella or gruyere cheese
  • --- For the Béchamel Sauce: ---
  • 2 tbsp butter, 2 tbsp flour, 1.5 cups milk, salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss the warm white rice with 1 tbsp of butter and spread it evenly into a buttered baking dish.
  2. Make the Béchamel: Melt 2 tbsp butter in a saucepan. Whisk in the flour and cook for 1 min. Gradually whisk in the milk until a thick, smooth, creamy sauce forms. Season with salt and pepper.
  3. In a skillet, sauté the onions and mixed seafood until just cooked.
  4. Spread the seafood and onions evenly over the buttered rice.
  5. Pour the creamy béchamel sauce entirely over the seafood layer.
  6. Top heavily with the shredded cheese. Bake for 15-20 minutes until the cheese is bubbling and beautifully browned.
