Seafood Doria (Japanese Rice Gratin)

Doria is a Japanese invention combining French gratin with rice. A bed of buttered rice is topped with a mix of shrimp and squid, smothered in a rich, creamy white béchamel sauce, covered in cheese, and baked until bubbling and golden.
Ingredients
- 2 cups cooked white rice (warm)
- 1 tbsp butter
- 1/2 lb mixed seafood (shrimp, squid, scallops)
- 1/2 onion (sliced)
- 1 cup shredded mozzarella or gruyere cheese
- --- For the Béchamel Sauce: ---
- 2 tbsp butter, 2 tbsp flour, 1.5 cups milk, salt and pepper
Instructions
- Preheat oven to 400°F (200°C). Toss the warm white rice with 1 tbsp of butter and spread it evenly into a buttered baking dish.
- Make the Béchamel: Melt 2 tbsp butter in a saucepan. Whisk in the flour and cook for 1 min. Gradually whisk in the milk until a thick, smooth, creamy sauce forms. Season with salt and pepper.
- In a skillet, sauté the onions and mixed seafood until just cooked.
- Spread the seafood and onions evenly over the buttered rice.
- Pour the creamy béchamel sauce entirely over the seafood layer.
- Top heavily with the shredded cheese. Bake for 15-20 minutes until the cheese is bubbling and beautifully browned.
