Rich Tonjiru (Pork Miso Soup)

Tonjiru is a rustic, nutrient-dense Japanese miso soup packed with thinly sliced pork belly, root vegetables like daikon and carrots, and earthy burdock root. It is an ultimate winter comfort food.
Ingredients (3-4 Servings)
- 1/4 lb Pork belly (sliced thin into bite-sized pieces)
- 1 cup Daikon radish & 1/2 cup Carrots (sliced thin)
- 1/2 block Konjac/Konnyaku (torn into bite-sized pieces and parboiled)
- 4 cups Dashi stock
- 3-4 tbsp Premium Miso paste
- 1 tsp Sesame oil & Green onions (for serving)
Instructions
- Sauté pork & roots: Heat sesame oil in a large soup pot over medium heat. Stir-fry the pork belly until no longer pink. Add daikon, carrots, and konjac, stir-frying for 2 minutes.
- Simmer in dashi: Pour in the dashi stock. Bring to a boil, then lower heat to a gentle simmer. Skim off any impurities from the surface. Cover and cook for 10-12 minutes until all root vegetables are fork-tender.
- Dissolve Miso: Turn off heat completely. Ladle some broth into a bowl, dissolve the miso paste smoothly, and pour back into the pot.
- Serve: Reheat gently on low (never boil miso soup after adding miso, as it destroys the delicate aroma). Serve in deep bowls topped with plenty of fresh green onions.
