Hojicha Ice Cream
A unique, creamy homemade ice cream featuring the smoky, caramel-like notes of roasted Japanese green tea.
Smoky, Nutty, and Refreshing
While matcha ice cream is famous, Hojicha (roasted green tea) ice cream is a hidden gem. The roasting process gives the tea a beautiful light brown color and a flavor profile resembling toasted nuts and caramel, making a truly unique ice cream.
Ingredients
- 3 tbsp Hojicha powder (finely ground roasted green tea)
- 1 cup whole milk
- 2 cups heavy whipping cream
- 3/4 cup sugar
- 4 large egg yolks
Instructions
- In a saucepan, heat the whole milk and heavy cream until steaming. Remove from heat.
- Whisk the Hojicha powder with a few tablespoons of the warm milk mixture until smooth, then pour it back into the saucepan.
- In a bowl, whisk the egg yolks and sugar until thick and pale. Slowly temper the eggs by drizzling in a small amount of the hot hojicha cream while whisking constantly.
- Pour the egg mixture back into the saucepan. Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon. Do not let it boil.
- Strain the mixture through a fine sieve, chill thoroughly in the refrigerator for 4 hours, and then churn in an ice cream maker.
