Korokke is a classic Japanese potato croquette. Soft, creamy mashed potatoes mixed with savory seasoned ground beef, coated in golden panko breadcrumbs, and deep-fried to absolute perfection.
Ingredients (Makes 6 Croquettes)
3 large Russet potatoes
1/4 lb Ground beef
1/2 Onion (finely minced)
Salt, pepper, and sugar (to taste)
Breading: 1/2 cup Flour, 1 beaten Egg, 1 cup Panko breadcrumbs
Vegetable oil (for frying)
Instructions
Mash potatoes: Peel and boil potatoes until soft. Drain and mash thoroughly while hot. Set aside.
Sauté meat base: Sauté minced onion and ground beef in a pan until cooked. Season with a generous pinch of salt, black pepper, and a teaspoon of sugar.
Combine & Shape: Mix the savory beef into the mashed potatoes. Allow the mixture to cool down completely (prevents breaking while frying). Shape into 6 flat oval patties.
Bread: Coat each potato patty in flour, dip into beaten egg, and roll firmly in crunchy panko breadcrumbs.
Deep-fry: Fry in oil heated to 180°C (350°F) for 2-3 minutes until golden brown and beautifully crisp. Serve immediately with Tonkatsu sauce.
