Classic Shoyu Ramen
Recreate a beautifully clear, deeply aromatic Tokyo-style Soy Sauce (Shoyu) Ramen at home.
Shoyu Ramen features a clear, elegant chicken and dashi broth seasoned with a complex soy sauce tare. It represents the historic foundation of traditional Tokyo-style ramen shops.
Ingredients (2 Servings)
- 2 portions Fresh Ramen noodles
- 4 cups Quality Chicken broth
- 1 cup Dashi stock
- Shoyu Tare: 4 tbsp Premium Soy sauce, 1 tbsp Mirin, 1 tsp Sake, 1 clove Garlic (smashed)
- Toppings: Chashu pork slices, bamboo shoots (Menma), green onions, nori, soft-boiled egg
Instructions
- Prepare Tare: Simmer soy sauce, mirin, sake, and garlic in a small pan for 2 minutes. Discard garlic; distribute the tare evenly into two large ramen bowls.
- Simmer soup base: In a pot, combine chicken broth and dashi stock. Bring to a gentle boil, then keep piping hot on low heat.
- Cook noodles: Boil fresh ramen noodles in a separate pot for 2 minutes (or per package instructions). Drain thoroughly.
- Assemble soup: Pour the hot broth over the tare in the ramen bowls and stir gently to combine.
- Finish: Add the drained noodles, arrange toppings neatly across the surface, and serve immediately.
