Zaru Soba is a refreshing, light Japanese meal perfect for hot summer days. Chilled buckwheat noodles are served on a traditional bamboo mat alongside a cold, savory dipping sauce called Tsuyu and aromatic garnishes.
Ingredients (2 Servings)
2 portions Dried Buckwheat (Soba) noodles
1 cup Concentrated Mentsuyu (s路b濃 tsuyu dipping sauce)
Garnishes: Finely sliced green onions, Wasabi paste, and shredded Nori seaweed
Instructions
Boil Soba correctly: Cook soba noodles in a large pot of boiling water for 4-5 minutes (per package instructions). Do not overcook.
The shock wash: Drain immediately and submerge in ice-cold water. Vigorously wash the noodles with your hands under cold running water to remove excess starch. This creates that elastic, clean bite. Drain completely.
Prep dipping sauce: Dilute mentsuyu with ice water according to instructions, dividing into two small dipping cups.
Assemble & Enjoy: Place the chilled noodles elegantly on a serving plate or bamboo mat. Scatter shredded nori on top. Dip noodles into the cold tsuyu along with green onions and a dab of wasabi.
