Black Sesame Pudding (Kurogoma Purin)

A sophisticated, silky smooth Japanese dessert. This no-bake Kurogoma Purin combines the deeply roasted, nutty aroma of black sesame seeds with a rich, creamy milk base. It is an elegant, not-too-sweet treat that perfectly cleanses the palate after a savory meal.

Ingredients
  

  • 3 tbsp Black sesame paste
  • 1.5 cups Whole milk
  • 1/2 cup Heavy cream
  • 3 tbsp Sugar
  • 1 packet Unflavored gelatin powder
  • 2 tbsp Cold water
  • 1 dollop Whipped cream
  • 1 tbsp Toasted black sesame seeds

Instructions
 

  • Preparation: Sprinkle the gelatin powder evenly over the cold water in a small bowl. Let it bloom for 5 minutes.
  • Mix the Base: In a saucepan, whisk together the black sesame paste and a small splash of the milk until smooth. Gradually whisk in the remaining milk, heavy cream, and sugar.
  • Heat and Dissolve: Place the saucepan over medium-low heat. Stir continuously until the mixture is steaming and the sugar is completely dissolved. Remove from heat.
  • Add Gelatin: Add the bloomed gelatin into the hot sesame milk mixture. Stir thoroughly until the gelatin is completely melted and incorporated.
  • Chill and Serve: Pour the liquid through a fine-mesh strainer into serving glasses for an ultra-silky texture. Refrigerate for at least 3 hours until fully set. Top with whipped cream and black sesame seeds before serving cold.
